Here's an easy side that is a favorite at my place. Oven Potato Planks. They're a much healthier alternative to french fries. Even the frozen ones you can oven bake can be pretty high in fat and calories. The trick is cutting your potatoes to a uniform thickness and making sure your oven is hot enough.
Large mixing bowl
4-5 Large potatoes, washed with skins on cut 1/4 inch thick ( I use Kitchen Klean)
Teaspoon Sea Salt
Teaspoon garlic powder
1/2 Teaspoon black pepper
Tablespoon olive oil
1/2 tablespoon canola oil
Preheat oven to 450. Combine all ingredients in mixing bowl and toss until all potato planks are evenly coated. Place a sheet of aluminum foil on large baking sheet and liberally spray with cooking spray. Spread the potatoes in a single layer and bake for 45 minutes, flipping once.
You can add a Parmesan cheese blend unless your family is like mine and HAS to have ketchup!
