A new study from the U-S Department of Agriculture shows butter consumption has reached a 40-year high in consumption and production. Last year, over one-point-eight billion pounds of butter was produced in the U-S - well over 2004’s total of just over a billion.
Experts say the shift from margarine and substitute to real butter is mainly due to the movement of more natural foods. Thanksgiving through New Year’s Day is the golden time of the year for butter, where an estimated 40-percent of all consumption and sales take place.
